If you are an IP person, you know that trial and error is a big part of getting your groove on with this awesome appliance. Please note that depending on the size of your squash, the results can vary. The winning recipe was made with a small squash measuring about 8″ long and 5″ wide on the steamer rack using instructions below. Let us know how it goes for you! As always we hope you enjoy our recipes and please give your suggestions for what […]

Instant Pot Mongolian Beef

*Post contains affiliate links, read more about that and our medical disclaimer here*   This recipe has been a long time coming and I am happy to share it with you finally! One of Roy’s favorite foods is Mongolian Beef and we have eaten a LOT of it from many different takeout and eat in places. Before the Instant Pot I had not been able to make a decent batch that was easy to replicate but this recipe is IT! Surprisingly it only took a few tries to get this one just right, the first few times the salt to sweet ratio was off for our liking. If you have tried our other recipes you may note that we are fans of big flavors, this recipe is no exception to that. Even though there are plenty of places these days that offer healthier versions of takeout foods, they are the minority and having a […]

Pizza Frittata

*Post contains affiliate links, read more about that and our medical disclaimer here* The pizza cravings around here are real and I have embraced the fact that (sometimes) they can be satisfied in a healthy way! I have been on a pizza bender the last week and have had all of the delicious REAL greasy takeout pizza, healthy homemade pizza with our crust recipe and now this Pizza Frittata! It might be the last pizza dish I need for awhile, we’ll see. No guarantees, ok? I was hungry and trying to make a quick healthy and nourishing meal while also using up ingredients that we had on hand. There was a little bit of cheese and pepperoni as well as some marinara sauce in the fridge so *lightbulb* I decided to make a simple pizza frittata. This is not something I have done before but just threw together what I […]

Curried Carrot Fritters

*Post contains affiliate links-read more about that and our medical disclaimer here* Hey there! We have a great recipe for you this week. We LOVE curry, chili powder and turmeric around here so if you do as well then you are in luck. I wanted to make a veggie something that was quick, delicious and healthy using simple ingredients that I tend to have on hand. So what came to mind immediately? Carrots, of course. I usually buy the huge 5 pound bag and start to run out of things to do with them by the time they are getting soft. We were at this point and I was feeling like having a savory pancake-y type of thing. The baby fell asleep, I rolled up my sleeves and it worked out! Side note-there is turmeric in this recipe and typically in almost all savory things we make-in case you haven’t […]

Sweet Spicy Chicken

*Post contains affiliate links-read more about that and our medical disclaimer here* Chicken is a staple in our house. We tend to keep it very simple with methods and focus on the flavor combinations. What can I say-I like delicious and easy recipes! This recipe is a sweet and spicy chicken that was a hit with my mom and our daughter. With school starting, work hours picking up and getting ready to move, we have been busier than normal around here but still have managed to cook dinner every weeknight, thanks to my awesome family! We are blessed to have my mom helping us out on days that we both work. Our daughter is so helpful with baby brother and my husband is the best teammate I could ever dream of. Making dinner every night is doable for my husband and I; we tend to turn to recipes such as this […]

Coconut Protein Pancakes

*Post contains affiliate links-read more about that and our medical disclaimer here* Mmmm, pancakes. Coconut Protein Pancakes, to be precise. Fluffy, delicious, moist pancakes. Minus the gluten? I am sure you know that it is possible. Grain free? Nut free? Dairy free? Paleo? Protein packed? Yes, yes, yes, yes and yes… Here we have created a recipe with these simple objectives in mind; Use up those pesky egg whites, don’t make them taste too coconut-ey, keep the fluff and moistness ratio in a good balance. Seems simple right? It was. Pancake batter is something we are familiar with the texture of so finding that perfect consistency wasn’t too difficult. These look like the pancake batter I remember from childhood, minus the clumps. They cook up like traditional pancakes too, medium low heat, oil the pan, once the bubbles start to form and pop they are ready to flip 😉 I […]

Lemon Pepper Asparagus

*Post contains affiliate links-read more about that and our medical disclaimer here* Asparagus is one of my favorite vegetables and before this I mostly enjoyed it steamed or roasted with a little salt, nothing fancy. If we were to get fancy, we would do bacon wrapped asparagus-because wrapping bacon around something is like insta-fancy, you know. This recipe kind of happened by accident; I was just messing around with a new way to make asparagus that would be quick and a little bit more exciting than our usual. So naturally I went for some of my favorite spices and added lemon, because duh! I love the combo of garlic, onion, salt, pepper and chili powder. Adding lemon just takes it to the next level! If you are feeling really crazy add the pinch of cayenne to it! When creating the recipe I initially made it using the frying pan and then […]

Leftovers Frittata

*Post contains affiliate links-read more about that and our medical disclaimer here* Have leftover egg whites? Have eggs? Ok, good. You need this frittata. This amazingly simple and delicious leftovers frittata… It all came together when I sparked an interest in creating some killer recipes for paleo ice cream. I was initially avoiding using egg yolks in my recipes. This was not because I have an egg intolerance or anything but simply because I didn’t want to separate the eggs… I know that sounds crazy. Maybe it is. Hang on, I will have an explanation for you. After many not so good batches of ice cream using all sorts of things to try and replace the egg yolks, I realized that I would just need to separate the yolks from the whites. It may seem simple to you but this was a very game-changing realization for me. I am grateful […]

Instant Pot BBQ Ribs

*Post contains affiliate links-read more about that and our medical disclaimer here* For those of you that have an Instant Pot, you know what a timesaver it is to have in the kitchen. If you don’t have one I would highly recommend looking into it. You can read more about it here. Whether you are a single person or have a large family I am sure that an electric pressure cooker will be a game changer for your cooking situation. The Instant Pot seems to be the most trusted brand of electric pressure cookers and is comparably priced with similar “copycat” brands. This is the model we have and it is used almost every day-I am not exaggerating. I would have to say that by far our favorite dish to cook in the IP is beef ribs. Ribs normally take at least 3-4 hours with other cooking methods but these are […]

We use lentils rice, chicken and a lot of veggies to make this a thicker soup that satisfies and nourishes you, especially when it’s cold out! Since Roy doesn’t care for soup, it is the kids and I that eat it (mostly the baby and I, to be most accurate). I will usually make a pot of this and either eat it for breakfast, lunch or dinner at random until it’s gone or freeze half for later. It works really well to freeze in little containers for the baby to have a healthy meal ready to go! Please ask any questions and let us know how you like the recipe in the comments! Pumpkin Turmeric Soup

*Post contains affiliate links-read more about that and our medical disclaimer here* ‘Tis (still) the season for…squash. This week I am changing my tune with a different kind of squash recipe-Pumpkin Turmeric Soup. In case you haven’t heard-I love pumpkin because it is a squash and I love squash. You probably know about my love of squash from my previous post, so I won’t elaborate further. My favorite part of Halloween this year was eating the pumpkin we didn’t carve. Someone decorated her pumpkin with stickers and was perfectly happy with it that way. As soon as I saw that I realized I could eat it after Halloween… We were also not too upset to be missing out on the mess of pumpkin carving this year. We also did not object when she decided she was NOT going out to trick-or-treat in the rain. Ultimately she decided she didn’t even want […]

Chicken Veggie Stir Fry

*Post contains affiliate links-read more about that and our medical disclaimer here* It is about time that we share a recipe that is not some sort of a dessert…. I feel like I was on a treat spree the whole time we had my in laws here to visit. Part of it was my awesome mother-in-law spoiling us with delicious meals every day, so I wasn’t cooking regular as much as I normally would. I am also a huge advocate of treating yourself without limitations within a generally healthy and balanced diet/lifestyle. So if I felt like eating a healthier version of sweets literally 5-7 days/week for the rest of my life without feeling guilty, I would be totally fine with it, physically and mentally. I have learned not to be dogmatic about dieting and not to restrict myself from food. I don’t even stress anymore about what I eat that […]

Instant Pot Chuck Steak

*Post contains affiliate links-read more about that and our medical disclaimer here* As crazy as some people may think this is, I’ll let you in on a little secret. Our family likes our steak fully cooked. Yep, cooked thoroughly, all the way through, a little charred on the outside even sometimes. It’s an unpopular preference but we are thinking that maybe there are others out there who share it. This recipe is a good way to make a tougher cut of meat a lot more tender and far tastier than any other method we have used. If you have an Instant Pot (which I’m guessing you might if you’re checking this recipe out) then you know that most things are better when cooked under pressure. If you don’t have one then what are you waiting for?! Seriously. It’s a game changer in the kitchen. We used to make this recipe […]

Try this one using yellow split peas or check out our latest recipe for Yellow Split Pea Soup here I LOVE split pea soup. Seriously, almost as much as I love tacos… OK maybe just as much. This Christmas we were sent home with leftover ham from the Christmas Eve dinner and I naturally had to use it to develop a recipe for some awesome split pea soup! In the Instant Pot, of course! We have played around with this recipe and it is very delicious regardless of the combination of main […]
