If you are an IP person, you know that trial and error is a big part of getting your groove on with this awesome appliance. I have been working on getting this recipe ready to share for the last few months. In this experience, I have had spaghetti squash turn to complete mush, then be far too under cooked the next time. Plantain Pizza Crust

A legit plantain pizza crust that happens to be vegetarian, paleo-ish friendly and also gluten free, dairy free and nut free! This has been fully approved by Roy, my in laws and the kids, fyi. The 6 year old has never been more excited about vegetables than when I gave her the pizza pictured above! I prefer the blender method listed (we use a Vitamix) to prepare the batter, and find that using a rectangular metal baking sheet is best.
