This winter was really cold and snowy, we loved it at first then it got old really quickly! The snow has now melted and we are seeing some beautiful sun most of the days, though it is only around 50 degrees at most, it feels warm! Peaches and Nectarines… This was a big part of my life last weekend. Washing them, eating them, slicing them, flash freezing and storing them. I find that using the combo of arrowroot or tapioca starch and coconut flour lends the best texture to paleo baked goods. A legit plantain pizza crust that happens to be vegetarian, paleo-ish friendly and also gluten free, dairy free and nut free! This has been fully approved by Roy, my in laws and the kids, fyi.
