I have spent the last 2-ish years really playing it safe with the Instant Pot… mostly making soup… We make a lot of soup! There’s nothing wrong with soup, I really love it. This year I am determined to branch out and start creating more recipes in the Instant Pot that are anything but soup. I can guarantee you will still find more new soup recipes mixed in here too, I just really love making soup in the IP! We all absolutely LOVED this recipe-I have never seen our kids so willingly eat vegetables and meat! They actually asked for it the night after we ran out of leftovers, that is when I knew it was a hit! When our little lady says “Blog! Oh my gosh, BLOG!” after taking a bite it is a really good sign. This recipe is a great representation of the “Instant” pot since it […]

Instant Pot Yellow Split Pea Soup
*Post contains affiliate links and ads-please see more on that and our medical disclaimer here* Instant Pot Yellow Split Pea Soup is a spin-off of our original Instant Pot Split Pea Soup, which so many of you got creative with and shared ideas for. I love that you guys appreciate a good split pea soup, because I sure do too! Recently we created another soup recipe utilizing split peas as a complementary ingredient and it is one of my new faves. You can find that recipe here. This recipe for Yellow Split Pea Soup is in honor of one of our members in the new Allergy Friendly Instant Pot Facebook Group. This member, along with many other people out there, is unable to have onion or garlic. These are go-to spices for many cooks, myself included, so making a soup recipe omitting them was a challenge I have been working […]

I am always loving the many new recipe inspirations, ideas and groups there are for healthy eating and the amount of support online for them! The internet age is really helpful considering the learning curve which can come with so many of the challenges we are faced with in the kitchen! We recently started an “allergy friendly” Instant Pot Facebook Group, open […]

*Post contains affiliate links, read more about that and our medical disclaimer here* This recipe has been a long time coming and I am happy to share it with you finally! One of Roy’s favorite foods is Mongolian Beef and we have eaten a LOT of it from many different takeout and eat in places. Before the Instant Pot I had not been able to make a decent batch that was easy to replicate but this recipe is IT! Surprisingly it only took a few tries to get this one just right, the first few times the salt to sweet ratio was off for our liking. If you have tried our other recipes you may note that we are fans of big flavors, this recipe is no exception to that. Even though there are plenty of places these days that offer healthier versions of takeout foods, they are the minority and having a […]

*Post contains affiliate links-read more about that and our medical disclaimer here* Chicken is a staple in our house. We tend to keep it very simple with methods and focus on the flavor combinations. What can I say-I like delicious and easy recipes! This recipe is a sweet and spicy chicken that was a hit with my mom and our daughter. With school starting, work hours picking up and getting ready to move, we have been busier than normal around here but still have managed to cook dinner every weeknight, thanks to my awesome family! We are blessed to have my mom helping us out on days that we both work. Our daughter is so helpful with baby brother and my husband is the best teammate I could ever dream of. Making dinner every night is doable for my husband and I; we tend to turn to recipes such as this […]

*Post contains affiliate links-read more about that and our medical disclaimer here* For those of you that have an Instant Pot, you know what a timesaver it is to have in the kitchen. If you don’t have one I would highly recommend looking into it. You can read more about it here. Whether you are a single person or have a large family I am sure that an electric pressure cooker will be a game changer for your cooking situation. The Instant Pot seems to be the most trusted brand of electric pressure cookers and is comparably priced with similar “copycat” brands. This is the model we have and it is used almost every day-I am not exaggerating. I would have to say that by far our favorite dish to cook in the IP is beef ribs. Ribs normally take at least 3-4 hours with other cooking methods but these are […]

*Post contains affiliate links-read more about that and our medical disclaimer here* Here it is-a delicious filling chicken soup recipe for the instant pot. We use lentils rice, chicken and a lot of veggies to make this a thicker soup that satisfies and nourishes you, especially when it’s cold out! Since Roy doesn’t care for soup, it is the kids and I that eat it (mostly the baby and I, to be most accurate). I will usually make a pot of this and either eat it for breakfast, lunch or dinner at random until it’s gone or freeze half for later. It works really well to freeze in little containers for the baby to have a healthy meal ready to go! Please ask any questions and let us know how you like the recipe in the comments! *Post contains affiliate links-read more about that and our medical disclaimer here* It is about time that we share a recipe that is not some sort of a dessert…. I feel like I was on a treat spree the whole time we had my in laws here to visit. Part of it was my awesome mother-in-law spoiling us with delicious meals every day, so I wasn’t cooking regular as much as I normally would. I am also a huge advocate of treating yourself without limitations within a generally healthy and balanced diet/lifestyle. So if I felt like eating a healthier version of sweets literally 5-7 days/week for the rest of my life without feeling guilty, I would be totally fine with it, physically and mentally. I have learned not to be dogmatic about dieting and not to restrict myself from food. I don’t even stress anymore about what I eat that […]

*Post contains affiliate links-read more about that and our medical disclaimer here* As crazy as some people may think this is, I’ll let you in on a little secret. Our family likes our steak fully cooked. Yep, cooked thoroughly, all the way through, a little charred on the outside even sometimes. It’s an unpopular preference but we are thinking that maybe there are others out there who share it. This recipe is a good way to make a tougher cut of meat a lot more tender and far tastier than any other method we have used. If you have an Instant Pot (which I’m guessing you might if you’re checking this recipe out) then you know that most things are better when cooked under pressure. If you don’t have one then what are you waiting for?! Seriously. It’s a game changer in the kitchen. We used to make this recipe […]

*Post contains affiliate links-read more about that and our medical disclaimer here* It’s Saturday over here and I am so glad that I made this Instant Pot Salsa Chicken early in the week! With how crazy busy life has been lately it has been amazing that I have been able to avoid cooking each night! With this batch of chicken I was supplied the protein for several lunches and dinners throughout the week! It is SO nice to have a versatile protein ready to go for your meals without preparing each night. This chicken was great as a taco filling initially, in salad, over quinoa, rice, on homemade nachos and mixed into a veggie soup! I was honestly planning to use it only in the tacos but ended up experimenting and found that it worked with much more than that… We used a medium salsa and could see maybe using a mild to make it even […]

*Post contains affiliate links-read more about that and our medical disclaimer here* Happy Taco Tuesday! Just kidding, it’s not Tuesday. That’s ok, because it doesn’t have to be Tuesday to have tacos. I believe that tacos are good for any day or every day, depending on what kind of mood you are in. I like tacos any time of the day as well-I’ll often enjoy tacos for breakfast, especially the day after making this Instant Pot Carne Asada 😉 I am a HUGE taco fan, if you weren’t already aware, I am guessing that is apparent now! I could eat tacos for a week or two straight and have no problems at all with it. I know because I have done this before… haha! I am happy to share with you our own twist on Carne Asada made in none other than our beloved Instant Pot (which doesn’t have a name-suggestions […]

Try this one using yellow split peas or check out our latest recipe for Yellow Split Pea Soup here I LOVE split pea soup. Seriously, almost as much as I love tacos… OK maybe just as much. Growing up my mom made split pea soup after having a ham for Christmas or just because! I would eat it for dinner and the next days for every meal until it was gone. No joke! This Christmas we were sent home with leftover ham from the Christmas Eve dinner and I naturally had to use it to develop a recipe for some awesome split pea soup! In the Instant Pot, of course! We have played around with this recipe and it is very delicious regardless of the combination of main […]
