Instant Pot Lentils and Rice

Apparently, I have been missing out on lentils and rice up until recently. I liked the idea of this recipe but wasn’t fully sold until I tried it a variety of ways. Going with the amounts of water I would have used for the lentils and rice separately, then of course adding some spices, it turned out to be really delish. After many attempts to perfect the flavor, even testing it out on my coworkers at a potluck, it is finally complete. Final thoughts: We found the spice level to be just perfect but of course, you can adjust it or omit the cayenne/Piri Piri if you wish. At 15 minutes, the lentils ended up “Al dente” and the rice sticky, which made for a nice combo. You can add a slight bit more or less water or adjust the time up/down to have them more to your texture preference. […]

We always add some extra Piri-Piri because we like our soup spicier! Use your judgement for the amount of spice you can handle and let us know what worked for you! I have done this same base recipe so many times, using 1 cup celery and 1 cup carrots, without garlic and onion powder and with fresh garlic and onion. I feel like as soon as school starts it is time for squash, baked goods and soup, and I know I am not the only one! This soup was inspired by a dish that my husband and mother in law make and uses peanut powder, which is not something I had heard of before. We usually make peanut powder at home by blending roasted peanuts on low in the blender, sifting, then repeating the process until you have enough. If you are an IP person, you know that trial and error is a big part of getting your groove on with this awesome appliance. We use lentils rice, chicken and a lot of veggies to make this a thicker soup that satisfies and nourishes you, especially when it’s cold out! Since Roy doesn’t care for soup, it is the kids and I that eat it (mostly the baby and I, to be most accurate). I couldn’t tell you why but prior to this the only way I’d ever tried lentils is in soup. I saw them in a salad and thought it was the coolest thing so then was inspired to cook them on their own. These are not too spicy, require just a few ingredients and have such a nice flavor! Roy is not a fan of lentils so I ate the whole batch over the course of a few days in different dishes.
