The Deets
This recipe is almost too easy that I feel like it doesn’t deserve a page on the blog, but considering how much refining it took, I am posting it for you. The fact is that I tried about 5 times to get the seasoning right since it is a much smaller batch than what we used to make in our Instant Pot, which by the way, JUST DIED after almost 5 years! WHHHHAAAAAT?! I know. Bummed! SO on that note, as you may imagine we are in the market for a new multi-use stove top cooker. Anything you all have in mind we will check out! This stovetop soup is actually much faster than the Instant Pot, but I will need to be able to make broth and other things in a pressure cooker or slow cooker.
I really wanted some light soup while I was transitioning back to a lower carb diet, as it really helps with symptoms of sugar detox, which are annoying and make me not want to eat at all. I loved how quick and easy it is to use store-bought broth for adding to random recipes, so I thought why not make a quick soup out of it. I usually make my own broth, but didn’t have any on hand and realized that the pre-cooked broth didn’t really need to be pressure or slow cooked, all that I needed was the veggies to soften, so why not speed up the process? I literally just boiled it for a short while and had some awesome fresh tasting veggie soup. I later added leftover chicken chunks to it and also some rice for the kids.
We’re still on the Walmart Delivery schedule, so I used their organic broth and I loved the flavor! Not as good as my own homemade, but for the purpose of quick and easy, we keep some cartons around. If you haven’t looked into Walmart Pickup or Delivery, now is the time! They offer more affordable healthy options than ever! The main thing that separates it from other grocery delivery services we have tried is that if a substitution is needed, they will upgrade your item and not the cost! More on that in the next post, but trust me, it is worth trying it out!
The collagen powder is totally optional but recommended, it’s an easy way to get some protein into the soup without having to add meat. You can play around with different veggies, but I really like this combo for how simple it is and the fact that I basically always have these specific ones on hand. I am all about go to recipes and keeping healthy quick options around to help me stay on track with a diet modification like sticking to low carb. I am doing a short bit of keto with a veggie heavy focus, then will transition to carb cycling to support the level of physical activity I do! I plan to post more about this topic, so if you’re interested and haven’t subscribed already, I highly recommend you do! The Recipe
Now, what I am guessing most of you came for, the easy stovetop soup recipe! In order to not overwhelm my low sodium readers, the salt is listed as optional. Take note that if you use anything other than Himalayan Salt, I can’t guarantee the level of saltiness it will lend, so use your saltiest discretion please. Enjoy!

- 1 1/2 cups cabbage chunks
- 1 1/2 cups celery including leaves loosely packed
- 1 cup sliced carrots
- 4 cups chicken broth
- 4-8 tablespoons collagen powder/peptides OPTIONAL
- 1 Pinch onion powder
- 1 Pinch garlic powder
- 1/2 tsp himalayan salt OPTIONAL
- 1/8 tsp ground peppercorn medley or regular pepper
Ingredients

- Cut all vegetables and place into medium saucepan
- Pour broth into saucepan, add collagen powder/peptides if using and stir to combine.
- Stir in seasoning, add more or less to taste
- Cover to bring to a boil, remove lid upon boil
- Boil on medium high heat uncovered for 15-20 minutes
- Stir occasionally and monitor
- Serve as a side or alone. Salt and pepper as needed for each person's preference.
