Plantain Pizza Crust

So here it {finally} is for you guys, after countless test batches and revisions. A legit plantain pizza crust that happens to be vegetarian, paleo-ish friendly and also gluten free, dairy free and nut free! This has been fully approved by Roy, my in laws and the kids, fyi. The 6 year old has never been more excited about vegetables than when I gave her the pizza pictured above!

I prefer the blender method listed (we use a Vitamix) to prepare the batter, and find that using a rectangular metal baking sheet is best. When serving we found that cutting the crust into squares makes for the easiest consumption!

A healthy pizza crust recipe made with plantains!

Ingredients
  • 2 medium green plantains
  • 1 cup tapioca flour/starch
  • 1/2 cup white rice flour
  • 1/2 cup coconut flour
  • 1/2 cup softened/melted butter or coconut oil
  • 1/3 cup water
  • 2 eggs
  • 1-2 tbsp sugar (optional)
  • 1 tsp salt

  • 2 medium green plantains

  • 1/2 cup coconut flour
  • 1/2 cup softened/melted butter or coconut oil
  • 1/3 cup water

  • 1-2 tbsp sugar (optional)
  • 1 tsp salt

Instructions
  1. Preheat oven to 350 F
  2. Grease a large metal baking sheet-depending on size of baking sheet you may do 2 batches
  3. In a large bowl mix together flours, salt and sugar
  4. Cut plantains (peel still on) into several chunks, widthwise, then cut each chunk lengthwise and remove the peel (unless you have a more efficient way of doing this-then do that and please share in the comments!)
  5. In a blender or food processor thoroughly combine the peeled plantain chunks with melted/softened butter, eggs and water.
  6. Pour plantain mixture slowly into flour mixture, stirring in as you go, until completely combined.
  7. Pour onto greased pan and bake for 15-20 minutes
  8. Add toppings and bake additional 5-10 minutes
  9. Repeat if necessary with remaining "dough"
