Oven Baked Chicken
Roasting a chicken in the oven is great for a family dinner or to have leftovers for the next few days!

  • 1 whole chicken(about 5 lbs)
  • 1 medium onion(chopped roughly)
  • 1 small lemon(optional)
  • 1tsp sea salt
  • 1tsp chili powder(mild-medium)
  • 1tsp turmeric
  • 1/2tsp black pepper
  • 1/2tsp garlic powder(or granulated garlic)
  • 1/2tsp paprika
  1. Preheat oven to 375°
  2. Rinse chicken, remove giblets and drain liquid from cavity
  3. Cut chicken in half on the breast side, leave spine intact
  4. Combine garlic powder, paprika, chili powder and turmeric in a small bowl, mix gently with fork until combined
  5. Sprinkle seasoning evenly on both sides
  6. Place in a 9″x13″ glass baking pan, skin/spine side up, completely flattened
  7. Quarter your lemon and onion, squeeze lemon juice from wedges over chicken
  8. Place onions and lemon wedges under the chicken, place a few onions on the chicken if you wish
  9. Bake covered with foil (sealing it around the edges of the baking pan) for at least 1 hr, then check.
  10. Uncover and cook additionally until finished, checking every 15 minutes.
  11. Check with a meat thermometer and when thickest part is at 165 degrees Fahrenheit/75 Celsius it is safe to eat
