Your continued support is appreciated! Now, I don’t know about you, but Green Chili Chicken, or “Verde Chicken” is one of those things I had always heard about but never really tried to make. Well, it turns out that it is so easy that it almost feels like a crime to post this recipe. The cool thing is, in the Instant Pot, it is soooo simple, yet so delicious!

The Deets

The hardest part about cooking at home is, well, cooking at home! We all have obligations and priorities regardless of what we do with our days. I have gone from a nine to five my whole career to now a stay at home working mom, and let me tell you, making a home cooked meal can be a daunting task in the midst of a busy life even when you don’t work at an office… Our goal is to provide resources on this blog to help balance a busy family life with things that add value, like quick yummy recipes! You only need 5 ingredients for this versatile chicken recipe, if you count “spices” as one ingredient.

We have used both local chicken breasts and thighs, 3 medium/large breasts or about 6 thighs were about 2.5 lbs, so keep it around that weight and you should be good! We have been getting them from a local farmers market but are hoping to try Butcher Box soon… just waiting on another one of those deals they do with free bacon for life or whatever it may be! As far as the green chili sauce goes, we have tried a number of them and this one is our favorite so far! As far as spices, we get ours from a local farmers market, but if we ever order online we tend to go for this brand, it is affordable and organic!

Cream cheese is usually the store brand organic, or whatever healthier version is on sale, we have been using Walmart Pickup or Delivery lately for groceries, it is such a time saver! The main thing that separates it from other grocery delivery services we have tried is that if a substitution is needed, they will upgrade your item and not the cost! More on that in the next post, but trust me, it is worth trying it out!

The best part about this easy Instant Pot recipe is the fact that you can use boneless skinless breasts or thighs, and the chicken can be used in a variety of dishes! Tacos, Enchiladas, Flautas, Salads, Sliders, Nachos… you name it!

Instant Pot Verde Chicken Yum
Easy recipe for Verde Chicken in the Instant Pot. Use whatever brands of sauce and cream cheese you desire, and of course, comment your variations below the post!

  • 1 10 oz can of green enchilada sauce or salsa verde
  • 5 oz water (fill enchilada sauce can halfway)
  • 3 tbsp cream cheese or sour cream (optional)
  • 1 teaspoon salt (optional)
  • 1 teaspoon chili powder (optional)
  • 1 teaspoon garlic powder (optional)

Ingredients
  • 2.5 lbs boneless skinless chicken breasts or thighs
  • 1 10 oz can of green enchilada sauce or salsa verde
  • 5 oz water (fill enchilada sauce can halfway)
  • 3 tbsp cream cheese or sour cream (optional)
  • 1 teaspoon salt (optional)
  • 1 teaspoon chili powder (optional)
  • 1 teaspoon garlic powder (optional)
Instructions
  1. Pour green sauce, water, and spices into inner liner
  2. Place chicken in, cover with sauce, close lid
  3. Set vent to seal, set for 30 minutes on "meat"
  4. Quick release when timer goes off (very carefully)
  5. Shred chicken with forks or hand mixer, or cut into slices
  6. Stir in cream cheese or sour cream (optional)
