It’s Saturday over here and I am so glad that I made this Instant Pot Salsa Chicken early in the week! With how crazy busy life has been lately it has been amazing that I have been able to avoid cooking each night! With this batch of chicken I was supplied the protein for several lunches and dinners throughout the week! It is SO nice to have a versatile protein ready to go for your meals without preparing each night. This chicken was great as a taco filling initially, in salad, over quinoa, rice, on homemade nachos and mixed into a veggie soup! I was honestly planning to use it only in the tacos but ended up experimenting and found that it worked with much more than that… We used a medium salsa and could see maybe using a mild to make it even more versatile! If you prefer spicier then I would recommend using 2 teaspoons hot sauce and even switching to spicy salsa if you REALLY like heat. I hope that this recipe is one that you can keep in your archives for those times when you don’t know what to make and feel like turning on your Instant Pot (or Crock-Pot) and walking away. Please note in the last part of the method the alternate directions for our readers using slow cookers!
A mildly spiced chicken recipe for your Instant Pot or Crock-Pot. This simple recipe uses chicken, salsa and a couple other ingredients to bring out the flavor. Just throw it all in and it's go time!

Ingredients
3chicken breasts
1cupwater
1cupmedium salsa
3/4cupchopped onion
3tbspcoconut oil
1tbspBragg's Aminossoy sauce, coconut aminos or tamari
1tspTapatio or other hot sauce
1/2tspfish sauceoptional
1/2tspsea salt

Ingredients

Instructions
Saute onion in IP with coconut oil and salt (optional-adds 5 min time to prep time)
Place chicken in Instant Pot
Mix all other ingredients in a bowl on the side
Drizzle mixture evenly over chicken
Set IP for 20 minutes on "poultry" setting
Allow to naturally release pressure for 10 minutes then quick release the remaining pressure
(Alternatively cook for 4-6 hours or until done in your slow cooker)
Use a hand mixer or two forks to shred the chicken
