Apparently, I have been missing out on lentils and rice up until recently. I liked the idea of this recipe but wasn’t fully sold until I tried it a variety of ways. Going with the amounts of water I would have used for the lentils and rice separately, then of course adding some spices, it turned out to be really delish. After many attempts to perfect the flavor, even testing it out on my coworkers at a potluck, it is finally complete.

Final thoughts: We found the spice level to be just perfect but of course, you can adjust it or omit the cayenne/Piri Piri if you wish. At 15 minutes, the lentils ended up “Al dente” and the rice sticky, which made for a nice combo. You can add a slight bit more or less water or adjust the time up/down to have them more to your texture preference. I tried this recipe adding in some onion to saute at first then adding the remaining ingredients, it was a bit strong for my taste but you may like it! As always feel free to modify our recipes to your liking and let us know what you tried and how it went!

My favorite way to eat this was in tacos. I used it in place of meat, and in conjunction with it. I also tried using the remaining bit to put into a soup after the soup was already cooked. We also ate it plain, as a side dish and as a topping for nachos! I love lentils and love how easy this dish is to make and keep around. I hope that you find this recipe to be a fun way to prepare these nutritious legumes!

Instant Pot Lentils and Rice Yum
An easy recipe for a spicy lentil and rice dish in the Instant Pot. It takes about 10 minutes to pressure up, plus 15 cook time-so about 25 minutes total time if you do a quick release at the end!

Ingredients
  • 4 cups water
  • 1 1/2 cups brown lentils
  • 1 cup rice
  • 3/4 cup medium salsa (mild or medium)
  • 2 tbsp olive oil
  • 2 teaspoons salt
  • 2 teaspoons chili powder (mild or medium)
  • 1 teaspoon garlic powder
  • 1/2-1 teaspoon piri piri or cayenne
Prep Time 1 minute
Cook Time 15 minutes

Ingredients
  • 4 cups water
  • 1 1/2 cups brown lentils
  • 1 cup rice
  • 3/4 cup medium salsa (mild or medium)
  • 2 tbsp olive oil
  • 2 teaspoons salt
  • 2 teaspoons chili powder (mild or medium)
  • 1 teaspoon garlic powder
  • 1/2-1 teaspoon piri piri or cayenne
Instructions
  1. Mix everything together in Instant Pot
  2. Close lid and set on "bean" setting for 15 minutes
  3. Quick Release Carefully, turn off warm setting
  4. Serve as a main or side dish
