Let’s not wait any longer… I gave a sneak peek to our new Facebook group and was planning on posting something else this week but you guys… this Instant Pot Beef Vegetable Soup is just too amazing! I have so many ideas and recipes to share with you all so prioritizing when to post everything is always fun. Since it is FREEZING here and I know so many people have just gotten an Instant Pot, a hearty beef broth veggie soup seems more appropriate than anything else on my radar.

Instant Pot Beef Vegetable Soup Yum
A rich vegetable soup made with beef stock, veggies and just a few spices. A great recipe for those new to the Instant Pot! Time listed is for Instant Pot method, see Crock Pot variation below.
Prep Time 5 minutes
Passive Time 95 minutes
Servings
Ingredients
  • 7 cups beef stock (if subbing other stock such as veggie, you may want to use additional flavoring for a rich flavor)
  • 3 1/2 cups russet potatoes (washed, with skin on, cut into 1" chunks)
  • 3 cups carrots (cut into 1" thick rounds)
  • 2 cups yellow onion (sliced thinly)
  • 2 cups canned seasoned tomatoes (sugar and additive free for Whole30)
  • 1 cup dry split peas (not soaked)
  • 2 tbsp soy sauce or appropriate alternative (coconut aminos for soy-free)
  • 1 tbsp sea salt
  • 1 tbsp Italian seasoning
  • 1 tsp dried coriander powder
Prep Time 5 minutes

Instructions
  1. Add all ingredients to Instant Pot and stir
  2. Set on "soup" setting for 12 minutes
  3. Allow to fully release pressure naturally, this takes about 50 minute for mine.
Crock Pot
  1. Add all ingredients to the slow cooker and stir
  2. Cook on low for 4-6 hours, or until vegetables are cooked to desired tenderness

I am always loving the many new recipe inspirations, ideas and groups there are for healthy eating and the amount of support online for them! The internet age is really helpful considering the learning curve which can come with so many of the challenges we are faced with in the kitchen! We recently started an “allergy friendly” Instant Pot Facebook Group, open to anyone interested in recipes catering to special dietary restrictions, preferences or actual allergies.

One thing I am passionate about in life and online communications is being an advocate for kindness and support. I have seen so many “trolls” and “keyboard warriors” online and find it to be very distasteful. I wouldn’t imagine surrounding myself with such characters in real life and luckily haven’t had any issues with groups we have. There are so many different ways of living life and not one person can say that their way is the best for every other person in this world. In regards to this recipe, obviously you can substitute any type of broth you would like here, as with all of our recipes. Know that the intention of this soup was to be like the “beef and barley” flavor I was craving at the time, so bear in mind that depending on what you sub, the result may not be as flavorful as the initial recipe.
