Ingredients
✓ 2 medium green plantains
✓ 1 cup tapioca flour/starch
✓ 1/2 cup white rice flour
✓ 1/2 cup coconut flour
✓ 1/2 cup softened/melted butter or coconut oil
✓ 1/3 cup water
✓ 2 eggs
✓ 1 – 2 tablespoons sugar (optional)
✓ 1 teaspoon salt
Instructions
✓ Preheat oven to 350 F
✓ Grease a large metal baking sheet-depending on size of baking sheet you may do 2 batches
✓ In a large bowl mix together flours, salt and sugar
✓ Cut plantains (peel still on) into several chunks, widthwise, then cut each chunk lengthwise and remove the peel (unless you have a more efficient way of doing this-then do that and please share in the comments!)
✓ In a blender or food processor thoroughly combine the peeled plantain chunks with melted/softened butter, eggs and water.
✓ Pour plantain mixture slowly into flour mixture, stirring in as you go, until completely combined.
✓ Pour onto greased pan and bake for 15-20 minutes
✓ Add toppings and bake additional 5-10 minutes
✓ Repeat if necessary with remaining “dough”
