About this Recipe
Butter plus eggs equal the perfect base for a solid breakfast. Start your day off right with our simple yet satisfying version of this breakfast classic. Ready in minutes!
✓ 2 small slices of bread (or one large boule slice cut in half) of your favorite bread
✓ 2 eggs
✓ 2 – 4 slices cooked ham meat
✓ 2 tbsp shredded cheese
✓ 1 tbsp. butter
✓ Salt and pepper
✓ 2 – 4 tomato slices (optional)
1. Crack the eggs into a small bowl (or coffee mug) and use a fork to whisk them together with some salt and pepper.
2. Melt the butter in a non-stick skillet over medium heat. Watch carefully the butter shouldn’t turn brown!
3. Pour the eggs into the skillet, pop your toast into the toaster. Stir eggs very frequently (almost constantly) for 1-2 minutes, until they are creamy and cooked.
4. Slice tomato, place eggs on toast, top with shredded cheese, meat & tomato slices, additional salt/pepper to taste.
Remember that the eggs will still be kind of cooking even after you’ve put them on your plate, so you may want to allow them to be just barely undercooked from where you prefer them.
These fluffy eggs pair well with many low-carb favorites as well, there are tons of lower-carb breads, or you could opt to make an alternate dish and eat the eggs on the side.
And, if you are really hungry, feeding a few people (or have extra-large eggs), don’t be shy. Add a little more butter to match!
