Ingredients

✓ 7 cups beef stock (if subbing other stock such as veggie, you may want to use additional flavoring for a rich flavor) ✓ 3 1/2 cups russet potatoes (washed, with skin on, cut into 1" chunks) ✓ 3 cups carrots (cut into 1" thick rounds) ✓ 2 cups yellow onion (sliced thinly) ✓ 2 cups canned seasoned tomatoes (sugar and additive free for Whole30) ✓ 1 cup dry split peas (not soaked) ✓ 2 tablespoons soy sauce or appropriate alternative (coconut aminos for soy-free) ✓ 1 tablespoon sea salt ✓ 1 tablespoon Italian seasoning ✓ 1 teaspoon dried coriander powder

Instructions

✓ Add all ingredients to the slow cooker and stir ✓ Cook on low for 4-6 hours, or until vegetables are cooked to desired tenderness
