✓ 4 large meaty short ribs
✓ 1 cup broth (in a pinch water works fine)
✓ 1 cup clean bbq sauce of choice (use additive and sugar free "paleo" BBQ sauce for Whole30)
✓ 1/4 teaspoon sea salt (plus more for initial salting)
✓ 1/4 teaspoon black pepper
✓ 1/4 teaspoon onion powder
✓ 1/4 teaspoon garlic powder
✓ 1/4 teaspoon turmeric
✓ 1/4 teaspoon chili powder
✓ 1/4 teaspoon allspice
✓ 1/4 teaspoon paprika
✓ Turn Instant Pot onto "Saute" function
✓ Liberally salt all sides of the ribs
✓ In a small bowl, mix together all spices to use as the spice rub
✓ Rub the meat with the spices on all sides
✓ When the IP says "Hot" put the ribs in to sear on all sides, starting with the fattiest side
✓ When seared, turn off the IP
✓ Pour in broth
✓ Drizzle BBQ sauce over all the ribs
✓ Turn IP onto "meat/stew" function and adjust to 35 minutes
✓ Allow to naturally release (about 15 minutes usually)
✓ In the meantime, begin to cook you side dishes, we like a simple steamed veggie and rice or potatoes!
✓ When pressure has released, turn IP back to "saute" and allow the liquid to reduce into a gravy/sauce, stirring occasionaly and scraping the bottom.
✓ Bear in mind, it will be pretty oily... we remove quite a bit of the fat with a spoon and save to cook with later.
✓ If you prefer you can use the fat from the gravy to brown the ribs in a frying pan or remove the gravy and use the IP to saute again.
✓ Alternatively you can broil them in the oven for a few minutes!
✓ Serve with your favorite side dishes and drizzle the gravy over it all for some extra yum!
