✓ 2 large green or slightly yellow plantains (not black/overripe)
✓ 1/4 cup lime juice
✓ 1/2 cup cornmeal
✓ 1/2 cup water
✓ 2 medium or 1 large egg
✓ 1/2 teaspoon sea salt
✓ Coconut oil for greasing baking sheet
✓ Blend all ingredients in high powered blender until fully combined
✓ Spread in very thin 5" circles onto liberally oiled baking sheet, use about 1 tablespoon oil per batch, leave at least 1" between each tortilla
✓ Bake at 425 for 6 min
✓ Use a very thin flat metal spatula to remove, you may have to scrape gently to remove them, they may stick a little
✓ Flip and bake additional 2 min if you want them crispy
✓ Serve with desired fillings
