Ingredients

✓ 30 slices pepperoni (sugar and additive free for Whole30)
✓ 4 eggss
✓ 1/4 cup pizza/spaghetti/marinara sauce (sugar and additive free for Whole30)
✓ 2 tablespoons olive oil (plus more for drizzling)
✓ 2 tablespoons shredded cheese (Omit for Whole30 and dairy free option)
✓ Sprinkle of oregano
✓ Dash of sea salt

Steps

✓ In a cast iron skillet on medium low, heat oil
✓ Place about 20 slices of pepperoni in the pan in a single layer
✓ Let cook for about 3 minutes
✓ Whisk together eggs and tomato sauce
✓ Gently pour into pan, do not stir
✓ Chop the remaining pepperoni and sprinkle over eggs
✓ Evenly sprinkle cheese and then the oregano
✓ Cover and let cook for 6-8 minutes then turn off heat and let sit covered for 5 minutes
✓ Slice and serve!
