✓ 2 1/2 cups chopped peaches (or nectarines)
✓ 1 1/2 cups cold water
✓ 2 tablespoons honey (or vegan friendly syrup)
✓ 2 tablespoons coconut sugar (or other sugar of choice)
✓ 1 tablespoon grass fed butter (coconut oil to make it vegan)
✓ 4 teaspoons tapioca starch/flour
✓ 1 1/2 teaspoon cinnamon
✓ 1/4 teaspoon nutmeg
✓ Whisk together thoroughly water, tapioca starch, sugar, honey, cinnamon, nutmeg in a sauce pan
✓ Chop peaches into 1/2 inch chunks, set aside
✓ Heat sauce pan mixture over medium high, stirring constantly until it is boiling
✓ Add butter and continue stirring until butter has melted in
✓ Add peaches, continue to stir constantly (scraping the bottom to prevent sticking) over medium high heat for 10 minutes to allow mixture to reduce to a thick syrup
✓ Serve over pancakes, waffles or toast, in yogurt, cereal or granola or just plain!
