Fruit and Veggie smoothie

Fruit and Veggie Smoothie

*post contains affiliate links, read more about that and our medical disclaimers here* Recently I have been craving smoothies, which tends to happen as soon as the sun starts to come out each year. This winter was really cold and snowy, we loved it at first then it got old really quickly! The snow has now melted and we are seeing some beautiful sun most of the days, though it is only around 50 degrees at most, it feels warm! A fresh fruit and veggie smoothie is a great treat regardless of the weather-here is one I have been loving lately. I highly recommend that you use a high powered blender and if you don’t have one, either cut your produce up more or gently steam it (then refrigerate) before blending, otherwise it will just take a long time to get to the right consistency. You can alter this […]

Spiced Paleo Porridge

Spiced Paleo Porridge

*Post contains affiliate links-read more about that and our medical disclaimer here* I have a squash obsession-it is true. There was no denying it any longer when I went through 8 winter squash in 5 days. Between eating them plain with a little sea salt and getting crazy with recipe development, it was easier than you may think. This recipe for Nut-Free Spiced Paleo Porridge is a result of me deciding to get a little more creative with these squash and (finally) remembering to record my measurements! I have always been a huge fan of oatmeal but avoid regularly eating grains these days as my system doesn’t always take kindly to them. I had been really wanting to make a nut-free spiced paleo porridge that doesn’t use a lot of ingredients and has a simple method. I am one of the many lovers of all things pumpkin spice but try […]

Paleo Peach Compote

Paleo Peach Compote

Peaches and Nectarines… ¬† This was a big part of my life last weekend. Washing them, eating them, slicing them, flash freezing and storing them. Nearly 30 lbs worth of peaches and nectarines that needed my help to avoid the spoils of being forgotten and rotten. My mom is a really awesome lady who, like most people, loves a good deal. My mom and I don’t normally eat a ton of fruit but my husband and daughter eat a fruit a fair bit. So mom started giving us peaches and nectarines throughout the week and I eventually tried them… They were so delicious and juicy sweet! Like candy, my mom said. I ate more fruit in the last week and a half than I have all month with those drupes in the house. Haha, drupes. ūüėÜ I had to, that word is awesome. I thought briefly that with the fruitful […]

Banana Pumpkin Bread

*Post contains affiliate links-read more about that and our medical disclaimer here* Here it is! Paleo banana pumpkin bread that is nut-free and pretty darn delicious! I find that using the combo of arrowroot or tapioca starch and coconut flour lends the best texture to paleo baked goods. If you are like most people I know who are not big fans of super egg-y baked goods, give this a try. I find it to be a nicer texture than the recipes using only coconut flour. Paleo baking is a tricky thing to master and I am enjoying on my journey of exploration with it. I am far from an expert but occasionally come up with some delicious wins worth sharing-like this paleo banana pumpkin bread! I like my bread to hold together without being too spongy. When making banana bread I find that it can sometimes be too wet or […]

Coconut Protein Pancakes

*Post contains affiliate links-read more about that and our medical disclaimer here* Mmmm, pancakes. Coconut Protein Pancakes, to be precise. Fluffy, delicious, moist pancakes. Minus the gluten? I am sure you know that it is possible. Grain free? Nut free? Dairy free? Paleo? Protein packed? Yes, yes, yes, yes and yes… Here we have created a recipe with these simple objectives in mind; Use up those pesky egg whites, don’t make them taste too coconut-ey, keep the fluff and moistness ratio in a good balance. Seems simple right? It was. Pancake batter is something we are familiar with the texture of so finding that perfect consistency wasn’t too difficult. These look like the pancake batter I remember from childhood, minus the clumps. They cook up like traditional pancakes too, medium low heat, oil the pan, once the bubbles start to form and pop they are ready to flip ūüėČ I […]

Iced Gingerbread Cookies

*Post contains affiliate links-read more about that and our medical disclaimer here* I don’t know about you but I really love a good gingerbread cookie. It needs to have a fairly spicy bite to it and be pretty thin, adequately dense and perfectly chewy. The sweetness of a good icing ideally helps to balance the spiciness of the cookie. Oh yeah, and you must never be able to guess that they are healthy! I was looking for a (gluten-free) recipe to try online and couldn’t find one that didn’t use nut flour! So I had to make one that suited my tastes and was gluten free, dairy free and nut free. These iced gingerbread cookies fit the bill!¬†Gluten free, vegan, allergy friendly and even paleo (if you’re “team white rice paleo!”) Here we have developed a cookie that is perfectly chewy, a tad crispy on the edges and keeps this texture […]

*Post contains affiliate links-read more about that and our medical disclaimer here* This new fruit ice cream trend is really something! We are huge fans now that I have tried it and we feel really good giving this as a treat to the kids! The key that I have found is the banana to (other) fruit ratio. We have had the best results when using 2 parts banana to 1 part other fruit. We have played around with a lot of different “nice cream” recipes and this peanut butter and jelly ice cream is by far my favorite! It is like a creamy peanut butter and jelly sandwich! Feel free to use other nut butters if you would like and let us know how it goes in the comments! Fudgy Blender Brownies

Fudgy Blender Brownies

*Post contains affiliate links-read more about that and our medical disclaimer¬†here* Fudgy blender brownies are possibly my laziest dessert recipe to date. They are even easier than the mug cake! Basically blend up your ingredients and bake. It’s about as easy as it gets! We use a Vitamix¬†but a regular blender could work as well, likely you will need to stir it throughout the process and possibly melt your chocolate chips. The main ingredient here is plantain, which can be found at most grocery stores these days, typically near the bananas. You will want to use overripe or black plantains. They will literally be black on the outside, like an extremely overripe banana. This means they are good to go for this recipe, they are not rotten! If you haven’t used plantains before, here is a pretty awesome way to start. They work wonderfully in this application to sweeten and […]

Then you will truly understand what I am telling you-that they are THE ABSOLUTE BEST SOFT AND CHEWY CHOCOLATE CHIP COOKIE-and they also happen to be gluten free. You will love them, assuming you love soft and chewy chocolate chip cookies. I am telling you this based on the reviews I have gotten from my gluten eating, gluten loving test subjects who I did that very thing to. *Post contains affiliate links-read more about that and our medical disclaimer here* Well, I said I wouldn’t do it. I wouldn’t be that real food blogger that constantly posts about treats. I told myself that I wanted to present as a realistic, day-to-day, easy recipe, family friendly, quick-ish real food type of blog. That is still the plan however my first post will be about banana vanilla ice cream… because this ice cream is just THAT GOOD! Seriously. Our daughter, the coconut flavor detective, had no idea this ice cream was made with a base of coconut cream… that was my exact intention! (recipe below post) So it began when my awesome sister decided to get one step closer to pursuing her next career venture and moved into an adorable inner city apartment with some roommates. She sold her car to lower her expenses and save money to move into […]

Gluten Free Pie Crust

*Post contains affiliate links-read more about that and our medical disclaimer¬†here* After many test batches and tweaks to this recipe, we are (finally) ready to share it with you all! The coolest thing about this gluten free pie crust is that it can be used for two individual pies with a bottom layer crust for each or it can be used to make a top and bottom crust for one pie. I have used it both ways and prefer to use it for 2 separate pies, or for one pie and one other yummy custard-ey dessert that I will post for you soon-once I have a good name for it! I encourage you to experiment with this pie crust, I like to make it very thin (as pictured) and it ends slightly crispy on the edges and cracks a little in some areas. I made my first banana cream pie a few years ago and only recently started experimenting on developing my own recipe for one. Roy’s favorite type of pie is banana cream pie and every one that I made or we bought just wasn’t quite what he had in mind and was not up to my standards either. We began our quest to create the perfect banana cream pie and I was making it both dairy free/paleo friendly and traditional whole milk real sugar versions. Every version I have made is gluten and nut free, and the final pie crust that was the best can be found here. This crust has rice flour in it so depending on your version/definition of […]

Hello Peanut Butter Chocolate Mocha! Whether you like an occasional treat or a daily dose of fancy, this is a quick way to step up your coffee game! I have spent way more time, energy and money on unhealthy coffee drinks than I would like to admit. In my high school there was a coffee cart on campus and that (as well as Taco Bell) is where I spent the money that I earned by working in the daycare! Once I outgrew the high school coffee cart I graduated to the hometown coffee options. Banana Avocado Ice Cream

*Post contains affiliate links-read more about that and our medical disclaimer here* It sounds weird, I know. Banana Avocado Ice Cream…. trust me, if you have not tried avocado in a sweet preparation, it is time you do. When Roy and I were making one of our first meals together, I put sliced avocado on the side and noticed he saved it until the end and sprinkled coconut sugar on it as a dessert. Of course I tried some of it too and was actually pretty impressed! I had previously tried a lovely chocolate mousse with avocado, coconut oil and milk as the base and LOVED IT. ¬†I had assumed that the reason avocado was so delicious as a dessert could be attributed only to the fact that it was hidden with copious amounts of sweetener and chocolate in that particular recipe. I was very wrong-it is actually a […]
