Instant Pot Lentils and Rice

Instant Pot Lentils and Rice

Apparently, I have been missing out on lentils and rice up until recently. I liked the idea of this recipe but wasn’t fully sold until I tried it a variety of ways. Going with the amounts of water I would have used for the lentils and rice separately, then of course adding some spices, it turned out to be really delish. After many attempts to perfect the flavor, even testing it out on my coworkers at a potluck, it is finally complete. Final thoughts: We found the spice level to be just perfect but of course, you can adjust it or omit the cayenne/Piri Piri if you wish. At 15 minutes, the lentils ended up “Al dente” and the rice sticky, which made for a nice combo. You can add a slight bit more or less water or adjust the time up/down to have them more to your texture preference. […]

Instant Pot Spaghetti and Meatballs

Instant Pot Spaghetti and Meatballs

I have spent the last 2-ish years really playing it safe with the Instant Pot… mostly making soup… We make a lot of soup! There’s nothing wrong with soup, I really love it. This year I am determined to branch out and start creating more recipes in the Instant Pot that are anything but soup. I can guarantee you will still find more new soup recipes mixed in here too, I just really love making soup in the IP! We all absolutely LOVED this recipe-I have never seen our kids so willingly eat vegetables and meat! They actually asked for it the night after we ran out of leftovers, that is when I knew it was a hit! When our little lady says “Blog! Oh my gosh, BLOG!” after taking a bite it is a really good sign. This recipe is a great representation of the “Instant” pot since it […]

Instant Pot Lentil Soup

*Post contains affiliate links and ads-please see more on that and our medical disclaimer here* This is a really simple Instant Pot Lentil Soup recipe using just lentils, split peas and a few veggies. We always add some extra Piri-Piri because we like our soup spicier! Use your judgement for the amount of spice you can handle and let us know what worked for you! I have done this same base recipe so many times, using 1 cup celery and 1 cup carrots, without garlic and onion powder and with fresh garlic and onion. We have made it using beef and chicken broth, but I am sure veggie broth would be great as well! We’ve added a cup or two of diced, canned seasoned tomatoes before and have replaced the lentils with both green and yellow split peas with good results. Depending on how you tweak the recipe, it may look […]

Instant Pot Yellow Split Pea Soup

Instant Pot Yellow Split Pea Soup

*Post contains affiliate links and ads-please see more on that and our medical disclaimer here* Instant Pot Yellow Split Pea Soup is a spin-off of our original Instant Pot Split Pea Soup, which so many of you got creative with and shared ideas for. I love that you guys appreciate a good split pea soup, because I sure do too! Recently we created another soup recipe utilizing split peas as a complementary ingredient and it is one of my new faves. You can find that recipe here. This recipe for Yellow Split Pea Soup is in honor of one of our members in the new Allergy Friendly Instant Pot Facebook Group. This member, along with many other people out there, is unable to have onion or garlic. These are go-to spices for many cooks, myself included, so making a soup recipe omitting them was a challenge I have been working […]

Instant Pot Peanut Vegetable Soup

Instant Pot Peanut Vegetable Soup

*Post contains affiliate links-read more about that and our medical disclaimer here* Back by popular demand this week is another Instant Pot recipe! I feel like as soon as school starts it is time for squash, baked goods and soup, and I know I am not the only one! This soup was inspired by a dish that my husband and mother in law make and uses peanut powder, which is not something I had heard of before. We usually make peanut powder at home by blending roasted peanuts on low in the blender, sifting, then repeating the process until you have enough. If you do this too fast it becomes peanut butter so it is important to blend on low in small amounts and sift often. My husband usually takes about ten minutes to get a 32 oz container full of peanut powder. If you aren’t patient enough for that, you can find peanut powder […]

*Post contains affiliate links, to read more about that and our medical disclaimer here* A simple Instant Pot recipe that has taken longer than I will admit to perfect. If you are an IP person, you know that trial and error is a big part of getting your groove on with this awesome appliance. I have been working on getting this recipe ready to share for the last few months. In this experience, I have had spaghetti squash turn to complete mush, then be far too under cooked the next time. Please note that depending on the size of your squash, the results can vary. The winning recipe was made with a small squash measuring about 8″ long and 5″ wide on the steamer rack using instructions below. Let us know how it goes for you! As always we hope you enjoy our recipes and please give your suggestions for what […]

Instant Pot Mongolian Beef

Instant Pot Mongolian Beef

*Post contains affiliate links, read more about that and our medical disclaimer here*   This recipe has been a long time coming and I am happy to share it with you finally! One of Roy’s favorite foods is Mongolian Beef and we have eaten a LOT of it from many different takeout and eat in places. Before the Instant Pot I had not been able to make a decent batch that was easy to replicate but this recipe is IT! Surprisingly it only took a few tries to get this one just right, the first few times the salt to sweet ratio was off for our liking. If you have tried our other recipes you may note that we are fans of big flavors, this recipe is no exception to that. Even though there are plenty of places these days that offer healthier versions of takeout foods, they are the minority and having a […]

*Post contains affiliate links-read more about that and our medical disclaimer here* I’m sure all of you have heard about bone broth by now with all of the media attention it has gotten. There are a plethora of blog posts about the amazing benefits of bone broth, many people swear by it for boosting the immune system, keeping their skin and hair looking and feeling great, maintaining a healthy digestive system and more. I encourage you to do your own research if you are interested in learning more about exactly why and bone broth is good for you! Aside from the health benefits of broth, it is pretty versatile and always adds extra flavor to most dishes. If there is one thing that we use with almost every meal, it’s a nice homemade stock or broth. We also enjoy it plain with salt and pepper when we’re feeling sick. We […]

*Post contains affiliate links-read more about that and our medical disclaimer here* For those of you that have an Instant Pot, you know what a timesaver it is to have in the kitchen. If you don’t have one I would highly recommend looking into it. You can read more about it here. Whether you are a single person or have a large family I am sure that an electric pressure cooker will be a game changer for your cooking situation. The Instant Pot seems to be the most trusted brand of electric pressure cookers and is comparably priced with similar “copycat” brands. This is the model we have and it is used almost every day-I am not exaggerating. I would have to say that by far our favorite dish to cook in the IP is beef ribs. Ribs normally take at least 3-4 hours with other cooking methods but these are […]

Instant Pot Chicken Soup

*Post contains affiliate links-read more about that and our medical disclaimer here* Here it is-a delicious filling chicken soup recipe for the instant pot. We use lentils rice, chicken and a lot of veggies to make this a thicker soup that satisfies and nourishes you, especially when it’s cold out! Since Roy doesn’t care for soup, it is the kids and I that eat it (mostly the baby and I, to be most accurate). I will usually make a pot of this and either eat it for breakfast, lunch or dinner at random until it’s gone or freeze half for later. It works really well to freeze in little containers for the baby to have a healthy meal ready to go! Please ask any questions and let us know how you like the recipe in the comments! Pumpkin Turmeric Soup

Pumpkin Turmeric Soup

*Post contains affiliate links-read more about that and our medical disclaimer here* ‘Tis (still) the season for…squash. This week I am changing my tune with a different kind of squash recipe-Pumpkin Turmeric Soup. In case you haven’t heard-I love pumpkin because it is a squash and I love squash. You probably know about my love of squash from my previous post, so I won’t elaborate further.  My favorite part of Halloween this year was eating the pumpkin we didn’t carve. Someone decorated her pumpkin with stickers and was perfectly happy with it that way. As soon as I saw that I realized I could eat it after Halloween… We were also not too upset to be missing out on the mess of pumpkin carving this year. We also did not object when she decided she was NOT going out to trick-or-treat in the rain. Ultimately she decided she didn’t even want […]

Instant Pot Chuck Steak

Instant Pot Chuck Steak

*Post contains affiliate links-read more about that and our medical disclaimer here* As crazy as some people may think this is, I’ll let you in on a little secret. Our family likes our steak fully cooked. Yep, cooked thoroughly, all the way through, a little charred on the outside even sometimes. It’s an unpopular preference but we are thinking that maybe there are others out there who share it. This recipe is a good way to make a tougher cut of meat a lot more tender and far tastier than any other method we have used. If you have an Instant Pot  (which I’m guessing you might if you’re checking this recipe out) then you know that most things are better when cooked under pressure. If you don’t have one then what are you waiting for?! Seriously. It’s a game changer in the kitchen. We used to make this recipe […]

*Post contains affiliate links-read more about that and our medical disclaimer here* It’s Saturday over here and I am so glad that I made this Instant Pot Salsa Chicken early in the week! With how crazy busy life has been lately it has been amazing that I have been able to avoid cooking each night! With this batch of chicken I was supplied the protein for several lunches and dinners throughout the week! It is SO nice to have a versatile protein ready to go for your meals without preparing each night. This chicken was great as a taco filling initially, in salad, over quinoa, rice, on homemade nachos and mixed into a veggie soup! I was honestly planning to use it only in the tacos but ended up experimenting and found that it worked with much more than that… We used a medium salsa and could see maybe using a mild to make it even […]

That’s ok, because it doesn’t have to be Tuesday to have tacos. I believe that tacos are good for any day or every day, depending on what kind of mood you are in. I like tacos any time of the day as well-I’ll often enjoy tacos for breakfast, especially the day after making this Instant Pot Carne Asada 😉 I am a HUGE taco fan, if you weren’t already aware, I am guessing that is apparent now! I could eat tacos for a week or two straight and have no problems at all with it. I know because I have done this before… haha! Instant Pot Spiced Lentils

Instant Pot Spiced Lentils

Post contains affiliate links and ads-read more about that and our medical disclaimer here I love lentils! I also love our Instant Pot. I couldn’t tell you why but prior to this the only way I’d ever tried lentils is in soup. I saw them in a salad and thought it was the coolest thing so then was inspired to cook them on their own. These are not too spicy, require just a few ingredients and have such a nice flavor! Roy is not a fan of lentils so I ate the whole batch over the course of a few days in different dishes. Although lentils cook up easily on the stove-top, the Instant Pot is even more efficient. As with most of our pressure cooker recipes, put all the ingredients in the liner, stir, close and hit the button with the time you need. Come back up to 10 hours later […]

Try this one using yellow split peas or check out our latest recipe for Yellow Split Pea Soup here I LOVE split pea soup. Seriously, almost as much as I love tacos… OK maybe just as much. Growing up my mom made split pea soup after having a ham for Christmas or just because! I would eat it for dinner and the next days for every meal until it was gone. No joke! This Christmas we were sent home with leftover ham from the Christmas Eve dinner and I naturally had to use it to develop a recipe for some awesome split pea soup! In the Instant Pot, of course! We have played around with this recipe and it is very delicious regardless of the combination of main […]
